The flavours of ripe Merlot include red berries – particularly plums, raspberries and cherries. There is also a hint of fruitcake and chocolate. Tannin levels are lower than other red grape varieties and the skin is a deep colour.
Traditionally, the partnership of Merlot and Cabernet Sauvignon is a well known success blend the world over, as these grapes really do have an affinity for each other. Merlot has the ability to fill-out and even soften the austere and tough nature of a young Cabernet.
These days, Merlot is lauded in its own right and has been described by some as the “King of Wines”, as it is more opulent and fleshy than other well regarded varieties. Merlot’s rich bouquet can be one of the most pleasurable wine experiences, as few other wines can approach such richness.
While Merlot is also more approachable when young, due to its easy-drinking, softer nuances of currants, earth and tobacco, a good vintage will overwhelm you with bold aromas and flavours of plums, violets, chocolate and sometimes olives.
